Recipe of the Month

January is usually cold and dreary even here in the south so, warm comfort food really hits the spot with most people. This chicken and dumpling recipe is one of my family's favorite any time of year. It is really easy, that's my favorite kind, and super yummy. It's a recipe I got from a friend years ago and naturally I had to tweek it a bit. I hope you all like it.


Easy Chicken & Dumplings



4 large chicken breast halves

6 c. water

2 tesp. chicken bouillon

1/4 c. chopped onion

1/2 carrot, chopped (this is optional, mostly for color)

Boil all of the above in a large pot until chicken is tender. This makes your stock that you will add the other ingredients to. Remove the chicken, let cool slightly, cut into small chunks. Don't put chicken back in pan yet.

1 can cream of celery soup, undiluted

1 pkg. white gravy mix (mix with 1/2 c. water)

Whisk the soup and gravy mix into the pan of stock. Cook on medium heat about 5 minutes, then add chicken back into pot.

2 cans refrigerator biscuits (7.5 oz each)

Tear each biscuit into 4 -5 pieces and drop into pan with chicken and stock. Biscuits will swell for a few minutes, but will soon cook down. Cook for 15 - 20 minutes on low, stir often.
Serves 6 - 8
